What Picual tastes like

Picual is the powerhouse. Expect a green, assertive oil with notes of fig leaf, tomato plant and fresh wood, a pronounced bitterness and a real peppery kick at the back of the throat — the sign of a young, healthy oil. It accounts for roughly half of Spain’s production and dominates the province of Jaén.

If Arbequina is the easy introduction, Picual is the statement. Many brands run both — a bold Picual and a soft Arbequina — to cover the whole shelf. It’s available standard, early-harvest, organic or PDO (Sierra Mágina, Sierra de Segura, Sierra de Cazorla).

Picual from Jaén

Jaén, in eastern Andalusia, is the largest olive-oil-producing province in the world, and Picual covers the vast majority of its groves. The name comes from the pointed tip, the pico, of the fruit; locally it is also called Marteña or Lopereña. For 2026/27, the Junta de Andalucía’s first estimate puts Jaén’s harvest at 575,000 tonnes, more than a third of Spain’s total.

That abundance is a strength for a brand: supply, choice and competitive pricing at scale. But Picual is not one oil. Between an early-harvest lot from a mountain grove and a late, riper lot from the valley floor, the gap can be wider than between two varieties, so choosing the mill and the lot is where a Picual brand is made. What to know before choosing Picual

  • The EU health claim — Regulation (EU) No 432/2012 allows “olive oil polyphenols contribute to the protection of blood lipids from oxidative stress” only for oils with at least 5 mg of hydroxytyrosol and its derivatives per 20 g, and the label must say the benefit comes with 20 g a day. Early-harvest Picual is a frequent candidate, but it is a lab result for each lot, never a property of the variety.
  • Early harvest — the greenest lots are milled from mid-October: more intense, richer in polyphenols, lower in yield and priced accordingly. The main harvest runs from November to January.
  • Bitterness — it is a sign of freshness, but markets new to extra virgin can find it strong. Blending with Arbequina softens it without losing structure.
  • Shelf life — the most stable of the major Spanish varieties, well suited to long export routes and larger catering formats.

Is Picual olive oil good for frying?

Yes. Its high oleic acid content and natural antioxidants make it the most stable of the major Spanish varieties at frying temperatures, and the reference oil for frying in Spain.

Does Picual have more polyphenols than other olive oils?

Among the major Spanish varieties, yes, especially from an early harvest. The exact content depends on the lot, the harvest date and the milling, and is measured by laboratory analysis.

Can a Picual private label carry the EU health claim?

Only if the actual lot is analysed at 5 mg or more of hydroxytyrosol and its derivatives per 20 g of oil, with the 20 g daily intake stated on the label. The analysis should come before the label is designed.
